During the Easter holiday, Jamaicans typically eat lots of bun and cheese and fish (Sprat). Growing up my dad would ensure that we had at least 3 boxes of Easter bun, at least two 2.2lb cans of Tastee cheese, and 2lbs or more of Sprat. But what do you do when you're losing weight and shouldn't eat all that Easter goodness? Limit how much Easter goodness you fill up on, and limit what you have in the house.
So I bought only one bun, a piece of cheese, 1/2 lb of Sprat, and two bigger fish. I cut my slices of bun and my slices of cheese really thin and had it only once daily. I also only had one Sprat with escovitch dressing per day. Also to make sure I didn't overeat, I made sure to only have one bag of hardo rolls rather than one bag of hardo bread.
